Full Version: Pumpkin Pocket Cookies

I found this yummy recipe on a blog while blog surfing. They sound yummy and I can't wait to make them, pumpkin is one of my all time favorites. Here is a link ... you'll see the recipe there as well as the cute way she chose to package them up. http://lilybeanpaperie.typepad.com/

Pumpkin Pocket Cookies

2 T. white sugar

1 1/3 cups firmly packed brown sugar

1/2 cup shortening

1 egg

2 t. vanilla

1 cup pumpkin puree

2 cups flour

1 t. baking powder

1/4 t. baking soda

1/8 t. salt

1 1/4 t. pumpkin pie spice

1/4 t. cinnamon

1 cup raisins

1 cup semi-sweet chocolate chips

Icing:

3 cups powdered sugar

3 T. cream cheese, softened

1 t. vanilla

water...enough to make soft icing

Directions:

Cream both sugars and shortening until fluffy. Add egg, vanilla, and pumpkin and blend well. Add in flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon. Fold in raisins and chocolate chips.

Drop large gobs of cookie dough about 2-3 inches apart on baking sheet. Bake 15-17 minutes at 350 degrees until cookies are firm to the touch.

Whisk together icing ingredients to make a smooth glaze. Spread or drizzle over slightly warm cookies, and let set.

Enjoy-----I know you'll love 'em, and they make your home smell delish!

Hmmmm…it says 16-24. I make mine medium-ish and think I get around 20. Hope that helps---enjoy them!

PLEASE tell us how these are!

I need a great cookie recipe for a cookie exchange I'm in come December and although I have a few recipes in mind, I could change to this one. I would love to package them up with clear wrap and then a twistie tie and tag -- stamped with a pumpkin and colored in nicely. The ideas are swirling in my head.

And I also wonder: how many cookies does this recipe yield??

I made these last night...and I got about 30 cookies. I changed one thing..left out the raisens.

My opinion :
Very yummy, soft and tastey. Better afte r they are cold..I didnt like them as much when they were hot. They stay moist and are very good. Kids love them, everyone at work loved them. Smells wonderful when you bake them. only con is they are not highly attractive. Just like a blob with icing..laugh.gif

A blob with icing ... still sounds good to me. I'm going to try them as well ... probably after all my tests are done next week. I don't want to make something yummy and have them in the house if I won't be able to eat them for 2 days. I don't care for warm cookies normally anyway ... so cold will be good for me. Thanks for the report Benita.

I made them a couple of days ago. They're good....but they're very cakey. I prefer a denser, chewier cookie. If you like cakey cookies, these are good. The flavor is much better the next day.

I guess my large gob of dough was smaller than hers--I got about 32 out of the batch. I did cook them a couple of minutes less.

I love pumpkin too...my fav vege. I won't be game to make these as I've put on weight...I'd lost some for the wedding and now I can feel it creeping back on...a constant battle....so got back into walking with DH yesterday.

Just freeze them..dont you know frozen cookies have no calories???? laugh.gif
