OK ... I haven't tried this recipe (YET) but I will because I love me some root veggies ... and roasted is even better. The recipe comes from the Whole Foods website blog.

Roasted Root Veggies

Serves 8
This mix of root vegetables combines sweet parsnip and carrots with earthy rutabaga. Thyme and lemon liven up the flavors in this side dish, delicious with any roast meat.

Ingredients
3 cups parsnips, peeled and sliced diagonally, 1/2-inch thick
3 cups carrots, peeled and sliced diagonally, 1/2-inch thick
3 cups rutabaga, peeled and sliced in wedges or chunks
6 thyme sprigs
1 tablespoon extra virgin olive oil
2 tablespoons fresh squeezed lemon juice (not bottled lemon juice)
1/2 teaspoon ground black pepper
1/2 teaspoon sea salt

Method
Steam parsnips, carrots and rutabaga over boiling water for 6 minutes, until half cooked. Alternatively, place vegetables in a microwavable dish with 1/2 inch water, cover loosely with plastic wrap, and microwave for 4 minutes.

Preheat oven to 400°F. Drain vegetables and toss with thyme, olive oil, lemon juice, pepper and salt. Spread on a rimmed baking sheet and roast for 35 minutes, until browned and tender.

Ok that looks totally YUMMY!! I'm going to have to try that - I have a new appreciation for vegetables now that I'm gluten free, and even though my family wouldn't eat this, I certainly would. Thanks for sharing Tania!

Michelle ... this would be a ton for one person ... but I was just thinking that you could eat some of the veggies as is ... and any leftovers could probably be turned in to a yummy soup with a veggie based stock ... pureed and perhaps a bit of cream added.

This does sound nice, we love roasties. What is rutabaga I've not heard of it down here.

It is much like a yellow turnip, swedish turnips sometimes they are called....does that help?

Thanks for the link, I had to laugh.gif when I saw the picture, it's what we call a swede and I have never roasted them. We love then boiled and mashed with carrots with loads of butter and pepper. there grow great ones down south and are normall not dug till they have had a good frost on them. nice mashed with potato as well.
